Lemon Balm Cake
3/4 Cup Milk
1 Tbs Lemon Balm (chopped)
1 Tbs Lemon Thyme
1/4 Cup + 2 Tbs Shortening
1 Cup Sugar
2 Cups Flour
1 tsp Baking Soda
2 tsp Cream of Tartar
1/2 tsp Salt
1 Egg
1 Tbs Lemon Juice
 
1. Heat, but do not boil,  herbs in the Milk and then set aside to cool.  
2. Cream together shortening and sugar.  
3. Add eggs and lemon juice.  
4. Add as small amount of flour and then add a little of the herbal milk until all the flour and milk are mixed in.  
5. Pour into an oblong pan.
6.  Bake at 325 for 50 min or until a toothpick comes out clean
