Stuffed Mushrooms
12 Fresh Mushrooms
2 to 3 Tbs melted Butter
3 Tbs Finely chopped Onions
2 Tbs Butter
1 Tbs olive oil
Steams from the mushrooms chopped up.  
2 to 3 Tbs Whipped Cream
3 Tbs Bread Crumbs
1/4 Cup Grated Swiss Cheese
1/4 Cup Grated Parmesan Cheese
4 Tbs minced Parsley
1/2 tsp Tarragon
 
1. Remove stems and save.  Hollow out the inside of the mushroom.
2. Coat the outside of the mushroom with the melted butter.  
3. Sauté in butter and oil the onions and mushroom stems.  
4. Turn off the heat and add bread crumbs, parsley, tarragon, whipped cream,  and Swiss cheese.  
5. Stuff the mixture into the caps of the mushrooms.  
6. Bake at 375 for 15 to 20 minutes.
