Sweet Potato and Peanut Stew |

1 Large Onion, Chopped |

2 Cloves Garlic, Minced |
|
|
2 tsp fresh ginger root |
|

1 1/2 tsp ground cumin |
|

1 1/1 tsp ground coriander |
|
|
1/2 tsp ground cinnamon |
|
|
1 pinch cloves |
|
|
1/2 Cup spaghetti sauce |
|
|
2 Large Sweet Potatoes, peeled and cut |

|
2 1/2 Cups Water |
|
|
1 carrot, chopped |
|
|
1 tsp Salt |
|
|
1/4 Cup unsalted peanuts |
|
|
1/2 Cup Peanut butter, smooth |
|
|
3/4 Cup Applesauce |
|
|
1/2 tsp Cayenne pepper |
|
|
1 Tbs vegetable oil |

Saute onions. |

mix in Garlic, Ginger, coriander, cinnamon, cloves, tomatoe sauce, Sweet potatoes, and carrots. |

Pour in water and season with salt. Bring to a boil, reduce heat and cook for 30 min. |

Mix in Cayenne and Peanut butter. Stir until mixed together. Add peanuts and serve. |
