Preheat oven to 450 |

Coat the bottom of the roasting pan with
olive oil |

Place roast in pan. Take a sharp knife
and lightly slice lines in the top. Make sure they are not deep
but only on the surface. |

Pour the milk over the top and a little
oil. |

Put on top the rosemary, garlic and
pepper and massage them across the top. |

Sprinkle bread crumbs on top. |

Pour on the almonds and cover the
surface of the roast |

Sprinkle the top with lemon juice and
dot it with butter. |

Reduce the heat of the oven to 350 and
place roast in oven. |

Let cook one hour or until a meat
thermometer reads a temperature between 150 and 160 degrees. If
the roast needs a little more liquid add a little milk. |

Once you take the roast out of the oven,
let it rest for 10 to 15 minutes. |

Slice and serve hot. |
