Almond Pork Roast
1 Pork Roast
1 Cup ground Almonds
1/4 Cup Bread Crumbs
1/4 tsp Black and White Pepper
3 Cloves minced Garlic
1/4 tsp ground Rosemary
1 Tbs Lemon Juice
Olive Oil
2 Tbs Milk
Butter
 
1. Preheat oven to 450
2. Coat the bottom of the roasting pan with olive oil
3. Place roast in pan. Take a sharp knife and lightly slice lines in the top.  Make sure they are not deep but only on the surface.
4. Pour the milk over the top and a little oil.
5. Put on top the rosemary, garlic and pepper and massage them across the top.
6. Sprinkle bread crumbs on top.
7. Pour on the almonds and cover the surface of the roast
8. Sprinkle the top with lemon juice and dot it with butter. 
9. Reduce the heat of the oven to 350 and place roast in oven.
10. Let cook one hour or until a meat thermometer reads a temperature between 150 and 160 degrees.  If the roast needs a little more liquid add a little milk.
11. Once you take the roast out of the oven, let it rest for 10 to 15 minutes.
12. Slice and serve hot.
